I am looking for some good LM bass recipes.Don't get me wrong guys.Usually i do not eat bass but from time to time when i nail 3 or 4 of them i make fillets and i deep fry them.Tastes not as good as walleye or crappie but still better than store fish.I have around 6# of those fillets in the fridge and i am looking for some new recipe.Maybe i will try to make some fish taco? :?
How do You guys prepare those tasty creatures?.

A few years ago I went up to Canada, with a few international guys I met through work. We had three Europeans on that trip. One guy was from Germany, and the other two were from Poland. We were lucky enough to have some of the best Walleye fishing I have ever experienced. That trip was early in the season, and we only caught a few Smallmouths, and they just had to eat them. I was amazed when all thee of guys decided smallmouths were the best tasting fish in the Canadian waters. And you should have seen how they cooked up the Northerns, they crosscut them all up, and salmon steak'd them. It actually turned out to be an effective way around the Y bones.

It was interesting trip, I was just fine with eating my walleyes.

M7, Please don't eat our bass. Note: They do sell them at Super H-Mart.

I cook them skin on poached in water in a large skillit ,
1/2 tbl spoon minced garlic and splach of Olive Oil , salt and pepper to taste.

Slow poached in water IMHO keeps the bass fillets moist and tender :thumbup:

Served on top of a bed of jasmine rice, a splach of lemon juice and Dinner is serviced !!!!
I spent half my money on fishing, gambling, alcohol, women and billiards. The other half I wasted.

While I do love some crispy fried 12" bass filets, I'd have to agree with Charged. My bass get to 12" in a year. It may take 3 years up there. Controversy seems to follow Mr. 7 where ever he posts. :?

Therein lies the problem. To me, fresh means today or tomorrow. Generally N/A in a store.

Best recipe I've ever used that is quick, tasty, and simple is the following:

Take a large ziploc bag and fill it with rive crispies. Take a rolling pin and grind it down into a powder. Place the powder in a tupperware dish. Add lemon pepper and hot shot( ground red and black pepper premix). Mix the batter up thoroughly. Take the fillets and dip them in whipped egg batter. Once dipped thoroughly place in the rice crispie mix. Batter sufficiently and place in the frying pan. Cook until browned. When cooked in the rice crispie batter it has a very light breading when finished cooking. Don't be shy with the lemon pepper and hot shot especially when cooking multiple fillets. I've used it for every type of fish and it works well with all.

I wonder how long it takes for a fresh, never frozen yellowfin tuna tuna steak to be delivered to your door. I bet you can't name even one that can get it to your door within two days of harvest. What you are getting is a deep frozen tuna steak. Not that there is anything wrong with that. All of the sashimi restaurants serve it and it is delicious. Just not as delicious as fresh, never frozen.

This from a guy that sleeps 4 feet away from the GoM.....

Week 2 January I might be down for meetings and another seminar.

And we get supposed fresh tuna at couple places in Bloomington. I got a still wiggly salmon at Kroger once about this time of year. So maybe.

Back in the day bass got eaten with lemon pepper mix and pile of tartar sauce. Had to be fresh and hot though....

The brown ones really eat better too.

Standard shore lunch mix and throw them in the deep fryer. As long as they are from a clean lake they are comparable to walleye and crappie IMO.

I am native American, and ate LM Bass as a kid growing up. We Filleted them, buttered and foil wrapped them, added lemon juice salt and pepper. Simple prep great flavor. I only eat them know if they get horribly injured during a hook up....but I have no problems with responsible harvesting....they taste pretty nice, the 2 pounders do anyway. :twisted:

Can You explain it to me guys--- You don't see any problem with eating walleyes but bass--no no no why??? For sure there is 3or 4 times more LM in Il waters than walleyes. Anyway i prefer perch or stealheads.

Dirk's in Lincoln Park is pretty good. I get my Big Eye tuna from them and make my own sushi hand rolls every other week. I also make poki too. Fish is good and service is good. There's been a run-up on black cod prices lately - I hear $50/lb. I have been craving it, but can't afford it. I will eat bass now. Thanks for great recipes.

Keep the game fish in the local fisheries. Local fisheries are generally over-fished anyways. I'd keep an occasional fish in the 1970s for eating but no more.
