So, i wanted fresh, not frozen trout yesterday. Went out and caught a couple, came home, cleaned them, seasoned with just salt and pepper. Cooked them in a homemade stovetop smoker. You need a heavy, non paited pot or wok, 2 tin pie platescut slits in the bottom of both). Line pot with heavy duty aluminum foil. Place a pie plate in it, a handfull of woodchips go in the pie plate ( i used hickory) invert the other pie plate and plce it on top. Put fish on top of that and cover everything with a couple layers of foil. Seal edges. Cover but dont push foil down to fish. Cook on high 45 minutes. Enjoy!
